Vegetarian Pasta

     1 cup cherry tomato or 4 med. tomatoes, cut-up
     1 med. onion
     2 stalk celery, sliced thin
     1 bunch green onion, chopped
     3 cloves garlic, minced
     ½ cup basil leaves, chopped
     1 cup crumbled feta cheese
     Cayenne, pepper to taste
     1 can tomato sauce (15 oz.)
     1 pkg penne pasta (12 oz.)
     Olive oil

     Heat skillet with 3 tbsp. oil, add garlic, pressing while cooking until golden.
     Add tomato sauce, let simmer for 2 minutes. Set aside.

     Cook pasta according to direction on package.

     In a skillet with 2-3 tbsp of oil, saute gently the onion and celery.
     Add the tomatoes, basil leaves, green onion and cayenne, stir just
     until the tomatoes get in between tender and firm.

     Place the pasta in a deep serving dish, mix in the vegetables, garlic tomato
     sauce and feta cheese. Sprinkle with ground black pepper.

     Kids likes this dish minus the black pepper
