Burrito

Carnitas meat (use previous carnitas recipe)
1 medium onion, diced
3 cloves garlic, minced
3 big tomatoes, diced
2 jalapeno peppers, chopped
3-4 tbsp. olive oil
Whole wheat tortilla

Cut the meat into chunks or cubes.
Heat oil in wok or saucepan, add garlic, pressing the garlic
until light brown, then add onion until translucent

Add tomatoes, peppers and carnitas meat. Cook uncovered in low heat
for about 25 - 30 minutes/or until the tomatoes and pepper are tender.

Wrap each serving in tortilla.
